What are your thoughts on this? Single or double tongue on the bassoon?

Is double tonguing practical? Yes. The more skills you can learn, the more skills you can master, the better and more competent player you will be.

It's definitely not something you want to dive into. You should improve your single tongue speed first only because there is a difficult tempo range where it is too fast to single tongue but too slow to double tongue. Also, I'll point out that as bassoonists, we never really tongue- since that is so difficult to grasp, bassoon instructors often teach that one should only tongue with the "front two taste buds of your tongue" or something to that affect.
