I searched through the other forums for something on this subject, but I couldn't find any thing. (might be using the wrong keywords).

I've rescently played around with my embouchure and "rolling in" on my high notes. I finally got it so that my high notes play somewhat in tune, but they're VERY quiet(my middle notes are louder). I've tried opening my throught alittle but it just slows the air flow.

Although sometimes it's nice that the high notes arn't blasting my ears anymore, I can't play them forte and they're not as clear as they should be.

You shouldn't be rolling in for pitch. This will limit your dynamic range, and most likely contribute to a thin, pinched sound. Rather than moving the flute, move your air. Blow downward into the flute more, and try experimenting with your embouchure to compensate for pitch. Roll back out on the high notes, and keep a nice open, rich sound. Intonation up there is very often troublesome, but it will come in time. Keep doing tuner work to get your high range where it should be.

good advice Chris, Penny, never ever roll in or out for pinch, you will decrease the tone by too much if you do that, that is why your high notes are so quiet, use your jaw to control the airstream, a good teacher can show you how to do that

I have an overbite so it's hard to make changes to my embouchure. I do draw my lips against my teeth and I can't figure out how to not do that.

I also have a hard time placing my lip on the lip plate of my new flute. The lip plate on my Jupiter is alot rounder than the lip plate on my old Artley.

I have an overbite as well (in fact, mine was so large they wanted to do surgery to correct it...I didn't let them, but that's another story), and I have no trouble playing with my embouchure. Perhaps you just haven't totally discovered the various muscles that are involved, and learned to alter them? That lip plate could be an issue as well. That's one thing you should always pay attention to when purchasing a flute....Comfort. If the lip plate doesn't feel quite right, then that flute probably isn't for you (or at least the headjoint isn't). It's too bad they can't make interchangeable lip plates of various shapes so that when you find a head you like, you can just choose the shape that fits your chin best and put it on.
