Here are ones I can think of off the top of my head..
-In First Suite in Eb by Holst there is a mini-solo in the first movement, and solo part with first clarinet and first coronet throughout the entire second movement.
-In the second movement of Second Suite in F major by Holst there is a nice slow solo.
-In the second movement of (English) Folk Song Suite by Vaughan Williams there is also a nice solo, as well as a neat little woodwind trio in the third movement.
-In Scenes from the "Louvre" the 4th movement "Nativity Paintings" is a lovely oboe solo that I enjoyed very much. this I uploaded onto the internet, it's just so pretty, I hope you enjoy at least listening to it " http://www.blogupload.com/12943/07_The_Nativity_Paintings.wma"
~ Some orchestral pieces:
-Oboe solo of "Polovetzian {sp?} Dances"
-Oboe solo in "William Tell Overture"
-"Scene" from Swan Lake
-"Morning Mood" from Peer Gynt
Those are all very well known pieces, even if not immediately recognizeable by title, and are very lovely. I hope this helped you.
(If you would like recordings of the solos, I have them on my computer and would be more than happy to upload them for you to hear. )

Antonin Dvorak's New World Symphony...I've heard arrangements with the oboe playing the famous theme for the Largo.
There was this amazing song that I just played in community band but I can't remember what it was. It was by Holst. Definitely a famous piece. Lemme look it up...Ooh, I found another one but it's not the piece I played recently. Suite No. 2 in F arranged for band...the second movement: Song Without Words has the most amazing oboe solo. Oh, and here's the one I'm thinking of. Suite No. 1 in E Flat...gorgeous solo in the middle of the 1st movement: Chaconne...accompanied by French Horns.
There's also Ride...new composition and I don't remember the composer.
Third Suite...don't remember the composer. Beautiful solo in the second movement, though. I played that solo myself and it was so amazing because at first it is only the oboe, then the clarinets have a soft accompaniment about 2 measures after you come in.
