Pines of Rome! The 1st bassoon part is insane, the 2nd not so much but still hard and awesome to play. It also uses a contrabassoon which makes it that much more awesome.

My conductor hadn't had a bassoon in years at the school until I came along my frehman year, and he went all out. Every piece either had a bassoon solo or a very exposed bassoon part. I guess he looked in his music library and went "gee, lets play all of this stuff here".
Anyway, it was fun, and I really liked playing "Vesuvius" by Frank Ticheli (cool bassoon part, bassoon solo, and it's all in weird time signatures"
"Variations on America" was pretty awesome too. It was basically a solo the entire time. (:
