The difference in bocals is in their material of construction and in their length. A shorter bocal will raise the pitch of your bassoon, while a longer one will lower it. A bocal with a number 1 designation is the shortest, with #2 being a bit longer, etc. The numbers do not represent a set length, however, as each manufacturer's bocals are different, but generally lower numbers on the bocal will give you a sharper pitch. If your horn is in good repair and has been adjusted by a proper bassoon technician, you will tune the horn with your embouchure, not with any adjustment (other than the bocal number you use) in the joints.
The other difference in bocals is their material construction. Different metals give different sounds and if you are buying a bocal you should play many bocals to see which sound you like on your particular horn.
