This might be a bit shocking to you, but, the only noticeable difference is that one type is made of rubber, and the other is made of metal.

rubber has a mellow sound, while metal has a bright sound

That is entirely not true. The color of the sound is affected by chamber size and shape, and the baffle. Metal mouthpieces sometimes can vibrate a little more and be a little more projective, but it`s hardly noticeably.

Example: Otto Link Super Tone Master: This is a metal mouthpiece and has a mellower sound than most rubber mouthpieces.
JodyJazz Classic: (plubber piece) More projective with a more aggressive sound than any other mouthpiece i`ve ever played.

However this is true in some cases, as in M.C. Gregory(rubber) vs. Bobby Dukoff(metal).

However, If Bobby Dukoff came out with a line of rubber mouthpieces with identical dimensions to their metal mouthpieces, the sound would still be THE SAME.

So in essence, there is no sound difference.
